IngredientsTwo apples
250g spelt flour (or all-purpose flour)
Two tsp baking powder
Two tsp ground cinnamon
125g light brown sugar, plus four tsp for sprinkling
125ml honey
60ml runny natural yoghurt
125ml flavourless vegetable oil
Two large eggs
75g natural almonds (unblanched)
MethodPreparation
Preheat the oven to 200C (180C fan/gas mark six) and line a 12-bun muffin tin with papers. Peel and core the apples, then chop into small pieces; put them to one side. Then put the flour, baking powder, and one teaspoon of ground cinnamon into a bowl.
In another bowl, whisk together 125g of brown sugar, honey, yoghurt, vegetable oil and eggs.
The muffin topping
Roughly chop the almonds and add half of them to the flour mixture; the other half goes into another bowl with a teaspoon of ground cinnamon and four teaspoons of brown sugar.
Fold the wet ingredients into the dry ingredients, add the chopped apple, then stir to combine.
Spoon the bumpy batter into the muffin papers and sprinkle with the topping (almonds, cinnamon, and brown sugar mixture).
Bake in the oven for 20 minutes, until risen and golden. Remove the muffins from the oven and let them rest for five minutes before placing them on a wire cooling rack.
Once cooled, enjoy with a lovely cup of coffee or tea, or any beverage you see fit.
