Why not treat yourself by making a moist Lotus Biscoff cake? This recipe is simple and only requires three ingredients, as detailed by 2016's BBC The Apprentice winner Alana Spencer.
Lotus Biscoff rapidly became popular and is known for its caramel and cinnamon flavour. Alana, owner of the luxury handmade cake company Ridiculously Rich by Alana, took to TikTok recently to try out a recipe she discovered on social media which she saw other people using.
She firstly shared a video demonstrating how to make the Biscoff creation step-by-step and then posted a follow-up carrying out a taste test with her partner. This cake only calls for 400g of Lotus Biscoff biscuits, 1.5 tsp of baking powder and 380ml of milk, which can be soy or dairy.
The Welsh businesswoman decorated her cake with an optional topping of Lotus Biscoff spread and some crushed biscuits by the brand. The first step saw Alana use an electric stand mixer to break the biscuits into a powder.
Next she added the baking powder along with half of the milk and some more of the remaining biscuits. The foodie combined the ingredients until they formed a smooth mixture.
After this, she poured the batter into a lined tin and put it in the oven to bake for 15 to 20 minutes at 170°C. Alana took the cake out of the oven once it had baked and was pleasantly surprised to see it looked pretty good but she thought it was "quite dense".
To decorate the sponge cake, she used a palette knife to spread 100g of melted Lotus Biscoff spread on top and finally some crushed biscuits around the edge. In the follow-up TikTok video, the entrepreneur cut into the cake and shared a slice with her partner.
He had the first mouthful and admitted: "That's blown my little mind." Before trying it for herself, Alana exclaimed: "It's so moist."
She took a bite and her eyes widened, showing how shocked she was at how well the three-ingredient cake turned out. The foodie rated it a 10 out of 10 and encouraged her followers to give the recipe a go.
In the caption of her TikTok post, she wrote: "I can't get my head around how good this is." The clip has garnered thousands of views and likes and a number of comments.
One user shared: "I've made this recipe loads of times and everyone loves it." Another asked: "So just biscuits, milk and baking powder? That easy??"
A third enthused: "Well that looks amazing!!" Someone else claimed: "For anyone wondering, in simple terms this works because the biscuits become your flour, fat and sugar, the milk creates a batter the baking powder is the leavening (raising) agent! And this trick works with Oreo's, digestives or any biscuit made from flour, fat and sugar!"
